
My youngest son asks me to make my panko crusted Salmon all the time. One way I get him to eat it is with this simple sauce. Take about 3 tablespoons of Dukes Mayonnaise and yes, it does have to be Dukes. Stir in the juice of one lemon and about a teaspoon of Dijon Mustard. If you want a kick add a pinch of cayenne pepper. Adjust to your taste and desired thickness. This is not brain surgery! This is also a great sauce for oven roasted Cauliflower covered in a bit of my favorite Indian spice, Tandoori. I promise, this is better that tartar sauce from fish sticks to pan sautéed salmon! For guests put it in a crystal bowl and you will look like Bobby Flay or Julia Child.
