Patsy’s Most Perfect Overnight Turkey Brine

I must admit I think that turkey is my least favorite protein but this overnight turkey brine makes it one of my favorites! Brining a turkey sounds very intimidating but it could not be easier. All you need is a bag, a cooler and three ingredients. This brine uses two quarts of apple juice, and no, it does not give the turkey an apple flavor in any way. You need a medium size cooler and some type of bag like a clean garbage bag, Ziploc bag or brown baking bag. Allow your turkey to sit overnight in the cooler. Drain the brine away and cook as you usually would. You will be dreaming of Thanksgiving turkey the whole year long after using my good friend Patsy's recipe.



Ingredients

Turkey, size of your choosing

1 gallon ice water

2 quarts apple juice

6 cloves garlic peeled and smashed

1 cup kosher salt

1 bag of ice


Special equipment

One large bag, big enough to hold the turkey and one and a half gallons of brine

One medium size cooler


Method

Open the bag in the cooler and combine apple juice, salt and garlic cloves. Place the turkey breast side down in the brine and covered completely with ice water adding more as necessary. Seal the bag and pour ice on top of the turkey. Allow the turkey to marinate in the brine overnight before cooking.
