Feeling better about your diet is easy by just adding a bit of green. Need a fast veggie? Sure you do! Nothing beats a plate of “little trees” as I and my sons called them when we were little. You only need five minutes to make broccoli taste great. The secret, heat, fat, salt and a bit of sugar.
Place a tablespoon of olive oil and a tablespoon of butter in a large skillet on high heat. The high temperature will encourage the natural sugars in the vegetable to caramelize. After the oil and butter are very hot, pop in your broccoli florets. Then, toss in the oil and butter and sprinkle with salt and pepper and one teaspoon of sugar to increase the caramelization of the greens. Stir around frequently for about 2 minutes and add another tablespoon of butter in the last minute of cooking. Remove from heat when the broccoli is bright green and starts to brown just the slightest bit. Serve immediately.
