This recipe was developed by my amazing wife when we had a glut of cucumber and tomatoes in the garden. We love it on the patio on a hot evening!
Ingredients
- 1 Cup Water
- 1/2 Cup Apple Cider Vinegar
- 1/4 Cup Olive Oil
- 1/4 Cup Sugar
- 2 Teaspoons Sea Salt
- 1 Tablespoon Black Pepper
- 3 Cucumbers
- 3 Tomatoes
- 1 Vidalia Onion
Method
In a large bowl, whisk together water, vinegar, oil, sugar, salt and pepper. Peel and slice cucumbers into 1/4 inch disks. Cut tomatoes into wedges. Thinly slice onion. Combine vegetables with the dressing and mix until well-coated. Cover bowl and refrigerate for at least 2 hours or overnight if possible.
